Tonys Kichenette

You can find us on Dumdum Road in Kolkata, right near the State Bank of India. The traffic on this road is always moving, and we are right in the middle of all that noise and dust. It’s a small kitchenette, so there isn’t much room for lounging around. Most people just grab something and head back to work or home. I spend most of my day by the counter, watching the buses go by and waiting for the next customer. We’ve been here at 42/B/1 for a few years, and we’ve seen the neighborhood change a lot. The bank workers are our best customers, and we know exactly what most of them want before they even say it. We don't use any complicated machines; most of the work is done by hand with old knives and heavy pans. Sometimes my hands ache at the end of the day from all the peeling and cutting, but it's okay. We don't have a big marketing plan or anything. We just hope the smell of the food brings people in. Kolkata is a city of flavors, and we just try to add our own small part to it. It’s a humble life, but it keeps us busy and fed. The tea is always hot and the snacks are ready when you are. We just stay focused on the work.
