Our workplace is right inside the Netaji Subash Bose International Airport area. We handle the food side of things for the flights coming in and out of the airport at 700052. It’s a high-pressure environment because planes don't wait for anyone. At Taj Sats Air Catering, we spend most of our time in the kitchens or moving carts around the tarmac. It’s a lot of logistics and making sure everything is packed correctly. We aren't a restaurant where you can just walk in and sit down. It’s more like a giant, busy workshop that never really sleeps. There’s always a shift starting or ending. The noise from the engines is something we’ve all just gotten used to over the years. We use a lot of big industrial equipment, and things can get pretty loud and hot in the kitchen areas. It’s not a glamorous job, but it’s a necessary one for the airport to function. We focus on getting the trays ready and making sure the supplies are loaded on time. Every day is a bit different depending on the flight schedules. We’ve got a big team of people here, all doing their specific parts. It’s a lot of work to keep things moving smoothly. We don’t have much time for fancy talk; we just focus on the task at hand and try to get it done right. It's a 24-hour operation, so there is always someone here keeping an eye on things.
