New Royal Restaurant

Our place is located at 1/B on Nagendra Nath Road, not too far from the Satgachi More. If you know Kolkata, you know how busy that intersection gets with all the rickshaws and buses honking. We have a small sign outside that sometimes gets covered by the trees, but most local people know where we are. The kitchen is in the back and it gets quite humid, especially during the monsoon months when the air feels heavy and thick. We have a few wooden tables that we’ve had since we first started. The paint is peeling a bit in the corners of the room but it adds character, I suppose. It’s just me and a couple of guys helping out with the cooking and serving. We start our day by going to the market early to see what's fresh and then we spend the rest of the morning prepping everything. The afternoon rush is always a bit of a scramble, with people shouting out orders and us trying to keep up. We don't use any fancy machines, just old-fashioned stoves and heavy pans. It’s a lot of manual work, lifting heavy bags of rice and scrubbing the big pots at the end of the shift. When the evening comes and things slow down, we finally get a chance to sit down ourselves and have some tea. It’s a quiet life in a loud city, and we’re just happy to be part of the neighborhood here near Satgachi More.
