New Arslan Biryani

Our place is at Kasikhali More, on the ground floor along Kazi Nazrul Islam Avenue. Most people just call it the airport road. Being near the Bank of India helps folks find us in the middle of all the Kolkata traffic. The avenue is always loud with horns and buses, which is just part of living in this city. We open up the shutters every morning and start the prep work. Biryani requires a lot of attention, from the rice to the meat and the spices. We don't cut corners on the time it takes. It’s just us working in the back, making sure the smells are right before we start serving. We get a lot of people who are commuting or working in the nearby shops. It’s not a fancy restaurant where you spend hours sitting around. It’s more of a place where you come to get a plate of food and then move on with your day. We try to keep the tables clean and the water jugs full. That’s really all people ask for. The floor gets a bit worn down from all the boots and sandals coming through, but that just shows we’ve had plenty of visitors. We don't bother with marketing or anything like that. We just stay here at Kasikhali More and keep the pots cooking for whoever stops by.
