We are located right on the ground floor of Block-C on VIP Road in Kaikhali. It’s a very busy spot because we are so close to the Kolkata Airport. You can often hear the planes, and the traffic on VIP Road is constant. Being opposite the Bank of India makes it easy for people to tell their friends where we are. We start our work quite early because biryani takes time to get right. You can’t rush the process if you want it to be done properly. We spend a lot of time over the big pots, making sure the heat is just right. It’s a lot of physical work, lifting heavy things and staying near the fire, but that is the job. We see a lot of travelers who are either just arriving in Kolkata or are about to leave. They usually want something filling and quick. The shop isn't decorated with anything expensive. We just have the basics. We think it’s better that way. It’s a practical place for people who just want to eat. Sometimes the humidity in Kolkata makes the kitchen feel even hotter, but we just keep going. We don't really have a big staff, just a few of us making sure the orders go out and the place stays clean enough for the next person. It’s a simple business right here by the airport.
