Ivory Restaurant

Ivory Restaurant is up on the higher floors at 22 Camac Street, right in the Park Street area. It’s a busy part of Kolkata, so finding a parking spot outside can be a real headache most days. Most of our day is spent prepping for the lunch and dinner crowds. We have a kitchen team that starts early, chopping vegetables and getting the sauces ready. The dining room has a lot of glass, so you can see the city moving below while you're working. It’s funny how different it looks from up here. We try to keep the floors shiny, but with so many people coming in, it’s a constant battle. The staff mostly keeps to themselves unless they’re serving. We’ve had the same manager for ages, and he’s pretty strict about how the tables are set. We don’t really go in for anything too flashy, just solid food and a clean place to sit. Sometimes the elevator takes forever to come up, and we have to apologize to the guests. It’s just one of those things about being in an old building on Camac Street. In the late evening, when the streetlights are all on, the place looks quite nice. We finish up late, clean everything again, and get ready to do it all over the next day. It’s a living, and we’re happy to be here. We often have to coordinate with the delivery guys who bring the fresh produce up the service lift. It’s a bit of a squeeze when the crates come in.
