Our spot at 18, Park St Park Street is right in the middle of everything in Kolkata. If you’ve ever walked down Park Street, you know how crowded it gets, especially during the holidays or in the evenings when everyone is out. We spend most of our mornings just getting everything set up behind the glass counters. The smell of the ovens usually fills up the space before the first people even walk through the door at 700016. It is a bit of an old building, so there is always something that needs fixing or a lightbulb that needs changing. The staff here has been around for a long time, and we all know each other’s habits by now. It’s a lot of standing on your feet all day, but that’s just how the confectionery business goes. We watch the taxis go by outside on the street while we’re packing up boxes of sweets. Sometimes the rain in Kolkata makes the street look completely different, and people crowd under the awnings to stay dry. We just keep doing what we do every day. It’s a pretty simple routine of baking, cleaning, and talking to whoever comes in. There isn’t a lot of quiet time here, but we prefer it that way. Most days just blend into each other, and before you know it, we’re locking up for the night and heading home through the city traffic. It is just the way things are here on Park Street.
