Charcoal

We are set up at 66/2B in Gariahat, right on Purna Das Road. This part of Kolkata is always moving, so there is usually a lot of noise outside our front doors. Sarat Bose Road is very close by, which helps people find where we are pretty easily. We called the place Charcoal because it fits with the kind of food we make. It is not a very big space inside, but we make it work for the people who stop in for a meal. Most of the time it is locals from the 700029 area coming by after work or during their lunch breaks. We do not have a big corporate team or anything like that. It is just us running the floor and making sure things are okay for the customers. The walls are simple and we keep the lighting a bit low in the evenings. Sometimes we run out of certain things if it gets too busy during the day, but we try to keep up with the orders. It can get a bit cramped when every single table is full. People in Gariahat are usually in a hurry, so we try to be as quick as we can. We have been at this spot for a while now. There is no fancy mission statement posted on the wall here. We just show up, open the shutters, and start the day. It is just a practical place for anyone. (249 words)
