You can find Vigneswara Caterers over on Kadvathara Road in Kaloor. It’s a busy spot in Kochi, and we’ve been operating out of here for quite a while now. Catering is a tough job because you’re always on the move and the timing has to be just right. We spend a lot of our time in the back preparing for whatever event is coming up next. Whether it is a small gathering or something bigger, the prep work is always the same. We start early in the morning when the air is still a bit cool. Our kitchen is full of big pots and long spoons, and there is always something bubbling on the stove. We don’t have a fancy front office where we sit around. Most of the time, we’re either cooking or loading up the vans to head out to a venue. Kaloor traffic can be a real headache sometimes, but we’ve learned all the shortcuts by now. We’ve handled all sorts of events over the years, and every one of them is a bit different. We don't go in for big advertisements. Usually, someone eats our food at a wedding and then calls us when they have their own function. It’s a word-of-mouth kind of thing. We just keep doing what we do, making sure the food is ready on time and tastes like it should for every guest.
