Our kitchen for Leo Caterers is right here on the ground floor of Amrutha Mall. If you know the Rajiv Gandhi Statue Junction, then you know how busy it gets out there. It’s a constant stream of cars and people. Inside our unit at 76, it's usually quite loud because we’ve got the stoves going and people shouting out orders. We spend most of our time prepping vegetables or getting the big pots ready for whatever event is happening that day. It gets hot in there, especially in the afternoons. Sometimes we have to move stuff through the mall corridors, which is a bit of a hassle when it's crowded, but we make it work. The staff mostly lives nearby, so we all know each other pretty well. We aren’t doing anything too complicated, just making food that people want to eat at their parties or weddings. There’s always someone cleaning something because the health inspectors are strict around here. We go through a lot of rice and flour every week. You can usually smell what we’re cooking from the hallway. Some days are slower than others, which gives us a chance to clean the dry storage or organize the utensils. We don’t have a big fancy storefront since most of our work happens in the back. It’s just a busy local spot trying to get the catering sorted for whoever calls us up that week, right at the junction.
