The Chinese Chang

The Chinese Chang is located out here in Bagaru. It’s a small place, nothing too flashy. We started this because there weren't many options for this kind of food in the area. Most days start with us chopping up a lot of cabbage and onions in the back. The kitchen gets pretty hot once the burners are going. We have a few tables, but a lot of people just stop their bikes outside and take their food to go. It’s a bit noisy because of the traffic on the main road nearby, but we’re used to it. We try to keep the place tidy, though it’s hard with people coming in and out all the time. Sometimes we run out of ingredients early if it’s a busy market day. We don't have a big team, just a couple of us doing the cooking and cleaning. It’s a local business through and through. We know most of the people who come in by name, or at least we know what they usually order. The menu is simple and we don’t try to do anything too experimental. It’s just basic food that fills you up. On rainy days, the floor gets a bit muddy from all the boots, so we’re constantly mopping. It’s just honest work. We open up in the afternoon and stay until the street lights come on and things start to quiet down in Bagaru for the night.
