If you are looking for us, we are on the ground floor of Ganpati Plaza on M I Road in Jaipur. It’s a very well-known building, so most locals know exactly where that is. M I Road is always moving, with tourists and shoppers everywhere. Being on the ground floor means we see everyone walking past the shop windows. It gets quite hot in Jaipur, so the plaza is a bit of a relief for people. Our food point isn't very large. We have a counter and some space for people to stand or sit while they eat. It’s usually quite loud because of the mall noise and the traffic from M I Road outside. We start early in the morning getting everything prepped. There’s a lot of chopping and cleaning that goes on before we serve the first customer. We don't use any fancy equipment, just the regular stuff you'd find in any kitchen. The staff is just a few of us who have worked together for a while. We know our regulars who work in the other shops in the plaza. They come by for a quick bite during their breaks. We don’t have a long history or any big claims; we just make food and serve it to whoever is hungry. It’s a busy life being in a place like Ganpati Plaza, but we like the energy of the crowds on M I Road.
