We are Agra Chaat & Caterering and you can find us at Dhi Walon Ka Rasta in Jaipur. It’s a narrow lane and we are right there in the middle of it. Our main thing is chaat—all the spicy, tangy stuff that people love to eat on the street. We also do catering for parties, but the chaat is what keeps us busy most of the day. The smell of frying potatoes and tamarind chutney is always hanging around our spot. It’s a very local vibe here. We don't have fancy menus printed on glossy paper. Most people just come by and see what we are making. The lane, Dhi Walon Ka Rasta, is always full of people, so there is never a quiet moment. We spend a lot of time standing behind the big metal plates, mixing things up for the customers. Our hands are always stained with spices. It’s hard work, especially when the weather gets humid, but it’s what we do. We’ve been in Jaipur for a long time and we know how people like their snacks. We aren't a big corporation. It’s just a few of us working together to get the food out. Sometimes we run out of something popular and have to tell people to wait while we make more. It’s honest work and we just try to keep the flavors right every single day.
