About Little Chefs Rasoi – Food & Beverages in Jaipur
The kitchen gets pretty hot by eleven in the morning here at C Scheme 502, R-9. We start early, chopping onions and getting the big pots ready. It’s a small space, so we have to stay organized or we end up bumping into each other. Little Chefs Rasoi isn't a big corporate place, it is just us making food every day. Some days the stove acts up or we run out of a specific spice and someone has to run out to the market quickly. We see a lot of the same faces coming in for lunch from the offices nearby. It’s nice to know what someone wants before they even say it. We don't have a big fancy staff, just a few of us doing the cooking and cleaning. There is always a stack of dishes waiting by the sink. The floor usually needs a good scrub by mid-afternoon because of all the flour and water. We don't spend money on fancy decorations, we just focus on the burners and the pans. Sometimes the phone rings non-stop and other times it is quiet for an hour. We just keep the tea going and wait for the next rush. It’s a lot of work, but we are used to the routine by now. We just stay here in C Scheme and keep the kitchen running as best as we can without making a fuss about it.
