Down at Sahkar Marg in Pratap Nagar, we have our small place called Hunger Station. It’s not a big fancy restaurant, just a spot where we cook. I spend most of my time standing near the stove or talking to the guys who do the deliveries. We started this because we wanted to have our own thing. The menu is mostly stuff that’s easy to eat on the go. We get a lot of students and people who live in the apartments nearby. The kitchen is where most of the action is. It gets smoky and we’re always running out of change in the cash drawer. We have a few benches outside where people sit and wait for their food. The street outside is always busy with bikes and cars, so it’s never really quiet here. We have to deal with the heat in the summer and the rain blowing in during the monsoon. We don’t have a big marketing plan or anything like that. We just write the specials on a chalkboard and hope people like what we're cooking that day. Sometimes we try a new dish and it doesn't sell, so we just take it off the next week. It’s just us trying to make a living and keeping the place running. We're here every day, except for some holidays when we finally take a break. It's a lot of grease and hard work but we're used to it.
