Ho Chi Minh Chinese Cuisine

Working on Ajmer Road means you get used to the sound of horns and trucks passing by all the time. Our kitchen, Ho Chi Minh Chinese Cuisine, is almost always filled with steam and the smell of soy sauce. It is a small setup, mostly just the woks and the chopping boards. We don't have a big fancy dining room with velvet chairs or anything like that. It’s more of a practical place where the food is the main thing. We spend our mornings cutting up vegetables like cabbage and carrots until our hands get tired. The fire in the kitchen is high and fast. You have to be quick or things burn. Sometimes we get a huge order all at once and everyone has to move double time. It gets pretty chaotic in the back when that happens. We have had this place for a bit and we know the delivery drivers who wait outside. They are always in a rush. We just try to get the containers packed and out the door. The floor is usually a bit slippery by the end of the shift, so we have to be careful. We don't use any fancy words to describe what we do. We just make Chinese food for the people around Ajmer Road. It’s a basic job, but it keeps us busy and the kitchen stays warm for us every single day.
