Billu Bhai Parathein Wale

We have been sitting here at Jodiamat Bara Bazaar for a long time. Our shop in Mohan Puri is right near Har Ki Pauri, so it is always very noisy and busy outside with all the pilgrims. We make parathas every single day starting from very early in the morning. It is not a fancy place at all. The walls are a bit stained from the smoke and the floor is just stone. We use a lot of flour and ghee. Billu Bhai is usually at the front or near the stoves. He doesn't talk much because he is busy with the rolling pin. We don't have a big menu. Just different fillings for the parathas like potato or cauliflower. Sometimes we run out of things if the crowd from the temple is too big. You have to stand and eat most of the time because we only have a couple of small benches. It gets very hot in the summer with the tawa going all day. We use old metal plates that have been washed a thousand times. There is no air conditioning here, just the breeze from the street if we are lucky. We don't have a website or anything like that. People just know where we are. We just keep making the dough and frying the parathas until the day is done. It is just a simple way to make a living in Haridwar.
