Grill By The Ocean

We are located inside the Hotel Rivatas on Mall Road in the Varanasi Cantt area. It’s a pretty good spot, not far from the Radisson, so we see people from all over the world coming through. Despite the name, we aren't actually by the ocean, which is a bit of a joke we have with the guests since we are in the middle of the city. We focus mostly on the grill and keeping the fire going at the right temperature. The kitchen gets pretty hot, especially in the summer months, but we’re used to it. We spend a lot of time checking the quality of the meat and vegetables that come in every morning. We don’t like to overcomplicate things. We just cook the food and get it to the table while it’s still hot. Some nights are quiet and we spend time cleaning the equipment, while other nights every table is full and the noise is constant. The staff has been here a while and we’ve learned how to handle the rush. We don’t use a lot of fancy words to describe what we do. We just work hard and try to make sure the food tastes right. It’s a busy life on Mall Road, but we like being here and seeing the different faces that walk in every evening. We just keep our heads down and keep the grill moving.
