Welcome Chart

We have a little shop, number 14, over in the Alipur area of Udaipur. It’s called Welcome Chart, though most people just know it as the spot near the head office. Udaipur is a beautiful city, but our corner of it is more about the daily local life than the tourist sights. We spend our afternoons prepping the different ingredients for the chaat. There’s a lot of chopping and mixing that happens before the first customer even shows up. When the sun starts to go down, that is when things really pick up. People in Udaipur love their evening snacks, so we see a lot of families and students stopping by. The shop isn't very big, so a lot of people just stand outside and eat while they chat with their friends. We don't have a big staff, it’s just a few of us making sure the plates are ready and the spices are just right. We’ve had this shop for a good while now. We don't spend money on fancy signs or anything like that. The regulars know where we are, and they keep coming back, which is enough for us. It can get a bit messy when it’s busy, but we try our best to keep up. It is a simple life, making snacks for people in our neighborhood. We like being part of the Alipur community and seeing the same faces every day.
