The restaurant is part of Amet Ki Haveli, right over at Chandpole. We are lucky to have a view of the water and the old city buildings from our spot. It’s an old place, a real haveli, so the walls are thick and the floors are made of stone. We try to keep it looking nice without changing too much of the history. It’s a bit of a walk through the narrow lanes of Udaipur to get here, but most people find it okay. We have tables set out where you can see the lake while you eat. It gets quite busy in the evenings when the sun goes down and the lights come on across the water. The staff is mostly local guys who have been with us for a while. We don't have fancy uniforms, just clean clothes. The kitchen makes a mix of things, but we try to keep it simple. Sometimes the wind from the lake blows things around on the tables, so we have to be careful with the napkins and menus. We spend a lot of time dusting because the old stone seems to catch everything from the air. It’s not a corporate chain, just a restaurant in an old house. We don’t have big flashing signs or anything like that. People usually find us by word of mouth or by wandering into this part of the city. We just try to make sure the food is decent.
