Our place, Biryani House And Live Kabab Restaurant, is situated on the ground floor of the Chetna Hotel. We have two shops, number 1 and number 6. We are right at Chetak Circle in Udaipur, which is a very central spot in the city. If you know Udaipur HO, you probably know where we are. We do a lot of kababs here, cooking them right where people can see. It makes the air smell like smoke and spices all day long. The building is older, but it has a lot of character. We started out with just one shop and then took over the other one when we needed more room for the grills. It’s a busy area with tourists and locals always walking by. We don’t really do much advertising; people just see the sign or hear about us from someone else. Working in Udaipur is nice because the city has a good vibe. Our kitchen team spends a lot of time prepping the skewers and making sure the coal is at the right heat. It’s not an easy job, especially when it’s hot outside in Rajasthan. We just keep our heads down and work. The 313001 area keeps us on our toes. Sometimes we run out of specific items by the evening, but that’s just how it is with fresh food. We try to be honest about what we have left. It’s just us here, making food every day for whoever walks in.
