Flames Restaurant

Our place is inside the Raghu Mahal Hotel over on Saraswati Marg. It’s right on the Airport Road in Udaipur, so we see a lot of people who are just arriving or getting ready to leave the city. Being in Darshanpura, it feels a bit different than the main tourist spots near the lakes. It’s more of a practical location. We have been working out of this hotel for a while now. The morning shift usually starts early because guests at the hotel want their tea and breakfast before they head out. The dining room has high ceilings and sometimes the echo is a bit much if it’s empty. We spend a lot of time polishing the cutlery and making sure the tablecloths are straight. The road outside can get quite loud with the traffic going towards the airport. You get used to the sound of cars and bikes after a week or two. We aren't trying to do anything groundbreaking here. We just serve the food and make sure people have water in their glasses. It’s a simple routine that we follow day after day. Most of the staff live nearby, so we walk or cycle to work. We talk about the weather or how the traffic was on the way in. It’s a decent place to work and we just try to keep things moving along properly for anyone who stops by.
