I’ve been running Tulsi Pan here in Pandesara for quite a while now. It’s just a small shop, nothing too big or special to look at from the outside. I mostly focus on making the pan just right for the regulars who come by. Everyone has their own way they like it. Some want more lime, and some want it very sweet. I remember most of their preferences without them having to tell me anymore. The counter is covered in small containers of different spices and pastes. I get my leaves fresh every morning from the market. If they aren't good, I don't buy them that day. The shop is located in a spot where a lot of workers pass by on their way to the factories. In the mornings, it’s a bit of a rush with people wanting something before their shift starts. Then it gets quiet until the evening time. I have a small fan that wobbles a lot, but it keeps the air moving so I don't sweat too much. I spend the quiet hours cleaning the jars or just looking out at the street. There is a tea stall nearby, so I usually get a cup from them around four. The street gets quite dark once the sun goes down because there aren't many lights right on this stretch. I usually keep my own light on for a bit longer so people can find their way.
