We opened this Sub Way spot in a row house at Sangam, right near the L.P. Savani School in Paal Village. Since we are so close to the school, we see a lot of students and parents walking by every day. It is a small space, really just a part of the row house that we converted so we could serve food to the locals. We have a few counters and some stools where people can sit and eat quickly before they head home. It is not a fancy restaurant with waiters or anything like that. We spend most of our time behind the counter making sandwiches and prepping the vegetables every morning. The morning is usually quiet, but once school lets out in the afternoon, it gets quite loud and busy for a couple of hours. We have to keep an eye on the clock to make sure we are ready for the rush of hungry kids. It’s a lot of chopping and cleaning, and we try to keep everything as neat as we can in such a small kitchen area. Sometimes the supplies don't arrive exactly on time, and we have to make do with what we have in the fridge. We don't have a big team, just a couple of us working the shifts. We enjoy the chat with the regulars who live in the row houses nearby. It feels more like a neighborhood kitchen than a big food chain.
