Kokkarako Biriyani

Kokkarako Biriyani is located at Five Road in Salem. We are right across from the Reliance Mall, so there is always a lot of traffic and people moving around outside our door. We decided to set up here because it's a central spot where everyone passes through. Our main thing is biriyani, and we spend most of our morning getting the rice and meat just right. It’s a lot of heavy lifting with the big pots, but we’re used to it by now. The shop itself is pretty straightforward. We have the counters where people order and some seating for those who want to eat right away. It’s often loud because of the main road, but that’s just life in Salem. We don't use fancy words to describe what we do here. We just cook and serve. Sometimes we run out of biriyani before the day is over, especially on Sundays. We try to estimate how much to make, but it’s not always easy. The team here is like a small family, and we all pitch in with the dishes and the serving. We aren't trying to be a five-star place, just a reliable spot for a good meal. If you are shopping at the mall and get hungry, you’ll see our sign right across the street. We keep the lights on late into the evening and we stay open as long as there is food left to serve people.
