Niti Restaurant

The doors at Niti Restaurant open up around the same time every morning at 5, DeepjyoT. We are located right in the Junction Plot area of Rajkot, so it gets pretty lively around here throughout the day. Being near the Post Office Junction Plot means there’s always people walking by, and we see many of the same faces every week. Inside, the tables are set up simply, and we spend a lot of our time in the kitchen getting things ready before the lunch crowd starts showing up. It’s not a quiet place, especially when the fans are running and the pots are clanking around back there. We mostly focus on getting the food out to people who are in a hurry or those who just want to sit for a bit. The 360001 area has been our home for a while, and we’ve gotten used to the rhythm of the neighborhood. Sometimes we run out of things or have a busy day where we can’t stop to talk, but that’s just how running a place like this goes. We keep the menus on the tables and try to keep everything wiped down. It’s just a regular spot where people come to eat without needing anything too special. We aren't doing anything fancy, just cooking and serving. The street noise from the junction usually carries inside, but nobody seems to mind much when they’re busy with their meal.
