Balaji Bhel Centre

Balaji Bhel Centre is located right by the bus station in Paddhari. Being so close to the transport hub means we are constantly dealing with people who are in a hurry to catch their next ride. It’s a lively spot in Rajkot, and there is never a dull moment. We spend our day mixing up bhel and getting snacks ready for the travelers. It’s a small operation, and we mostly work out of the space we have near the station entrance. We don’t have much in the way of seating, as most people just grab their food and keep moving. The air is always full of the sound of buses and people shouting, but we’ve gotten used to it over the years. We don't use any fancy equipment; it’s mostly just us using our hands and simple tools to get the orders done quickly. Every day is pretty much the same routine, but we meet so many different people passing through Paddhari that it stays interesting. We aren't trying to be the biggest place in town, just a reliable spot where you can get something to eat while you wait for your bus. It’s a lot of standing and a lot of quick service, but that is just the nature of being at a bus station. We just keep our heads down and serve the next person in line. It is hard work but we are here every day.
