Moje- Mastram Panjabi & Chinese

We set up shop near the Sadguru Restaurant, right at the Mahila College Chowk in Rajkot. It’s a lively spot, especially in the evenings when everyone is out looking for something to eat. We do a bit of everything here, mixing Punjabi dishes with the Chinese style that people seem to like so much these days. Opposite the Cosmo Complex, the traffic is always moving, and we are right in the middle of it. The kitchen is usually a bit chaotic with the sound of the pans clanking and the burners going full blast. We have a few tables, but a lot of people just want to take their food home. We use a lot of onions and ginger, and you can smell the spices from across the street. It’s not a quiet place. We have the radio playing sometimes, but usually, it's just the sound of the city. The staff here are mostly local guys who know the neighborhood. We don't have a menu with pictures; we just tell people what we made fresh today. Sometimes we run out of noodles or the paneer is late arriving, and we just make do with what we have. It’s a real kitchen with real people, and we are just trying to get the orders out as fast as we can without making mistakes. We have to wipe down the counters every few minutes because it gets quite greasy. We keep the salt and pepper shakers full.
