The shop is right here on Gondal Road in Rajkot, specifically in the Ellora Complex on the ground floor. It is pretty easy to find if you know where the railway crossing is. Most days start quite early because getting the dough ready for the parothas takes a lot of time. Being on the ground floor means people just walk in off the street all day long. It gets noisy sometimes with the traffic outside and the trains passing nearby, but that’s just how it is around here. We have been at this spot for a while now. Some regular customers come by every single day, and we usually know exactly what they want before they even say a word. The kitchen is often a bit cramped, especially when we have a few people working at once, but we manage to stay out of each other's way. Sometimes the weather makes things tough, like when it’s really hot in the summer and the stove is going, but you get used to it after a few years. We do not do much fancy stuff here. It’s just about making the food and getting it onto the plates for whoever is hungry. There is always something that needs to be cleaned or someone to talk to. We see a lot of people passing through this part of town since Gondal Road is such a busy area. It’s not a big place, just a simple spot where people can sit down.
