Hospital Chowk is always crowded. People are going to the hospital or coming from the court near Mochi Bazar. We’ve been set up on the Main Road in Rajkot for years. It’s a busy spot, and the traffic never seems to stop. Inside, it’s mostly about the parothas. We spend most of the day rolling dough and flipping them on the tawa. It gets pretty smoky when the lunch rush starts. People come in looking for a quick meal because they have appointments or work at the court nearby. It isn’t the kind of place where you stay for a long time. You eat your fill and then go about your business. The benches are simple, and we don't have much on the walls. It’s just about getting the food out to the people who are waiting. Sometimes it gets a bit chaotic when too many people show up at once, and we have to tell them to wait a few minutes. We get a lot of regulars who work in the market shops nearby. They don’t even have to look at a menu anymore. We know what they want. Rajkot is a busy city, and being right here in the middle of Mochi Bazar keeps us on our feet all day long. It’s hard work, but it’s what we do. We just keep the stoves hot and the flour ready for the next person who walks through the door.
