Uma Masala Udyog is tucked away in Ward Number 34. We are right by Chandani Chowk, which everyone knows is a busy part of the area. If you find Agrsen Bhavan, you are basically at our doorstep. This isn't a big corporate setup. It is more of a local workshop where we spend the whole day dealing with spices. You can smell the coriander and the dried chilies from the end of the block. It gets pretty dusty inside when the grinders are running. We spend a lot of time just cleaning the machines and making sure the bags are tied up tight. The walls in here are a bit discolored from all the spice dust over the years, but that is just the way it is. We have a few people from the neighborhood who help out with the packing. It’s loud when the motors are on, so we don't talk much during those hours. We just focus on getting the work done. The heat in the afternoon can be a bit much, especially with the smell of the peppers in the air, but we have a couple of old fans that keep the air moving a little. We sell to the local shops around here. It is just a regular life, nothing special or polished about it. We start the day early before the sun gets too high and we stop when the orders for the day are finished.
