We are based out at Plot No 125 in the M.I.D.C Industrial Area, which is in the more rural part of the region. Being out here means we have a bit more space for our equipment. At Taj Masal, our main focus is on spices and grinding. The air inside the unit usually smells quite strong of chili, turmeric, and coriander, which takes some getting used to if you aren't here every day. It’s an industrial setting, so it isn't exactly a showroom. We have machines running quite a bit, and there’s always a fine layer of spice dust on the floors no matter how much we sweep. We get raw materials delivered in big sacks, and then we spend the day processing them. It’s physical work, lifting heavy bags and making sure the grinders are working correctly. Being in the rural M.I.D.C area means it’s a bit of a drive for some, but it works for what we do. We don't really do much in the way of advertising. Most people who know us just come straight to the plot. We focus on getting the masalas ground and packed so they can be sent out to the shops. It’s a straightforward operation. We just show up, do the work, and head home. The machines are loud, and the work is repetitive, but it’s what we’ve done for a long time now.
