Saffron is situated right on the PashanBaner Link Road, which is a very busy stretch of road these days. The cars go by really fast outside, but inside we try to keep things a bit more steady. We have big windows in the front that let in a lot of light during the day, which is nice, but it also means we have to clean the glass constantly. We have a simple setup with wooden tables and some plants that we try to keep alive, though the dust from the road makes it hard for them. The kitchen staff stays in the back mostly, but you can hear them talking and the clatter of plates being stacked. We don't have a lot of space for storage, so we get our supplies delivered almost every single day. The PashanBaner area has changed so much since we first started, with all the new apartments and shops popping up everywhere. We just try to keep our head down and do our work. Sometimes the internet goes out and we have to take cash only, which makes some customers frustrated, but most of the locals understand how it goes. We stay open until the dinner rush is over and the traffic on the link road finally thins out. It is a long day on our feet, but the routine is familiar and we like being here.
