In our small space in Chinchwad, specifically around Zarod Waghodia in Vadodara, we spend most of our time over hot stoves and grinding stones. The day starts very early for us because the chapatis need to be ready before people head off to their jobs. We are a small team and most of us are covered in flour by the time the sun is fully up. It is hot work and the kitchen gets very stuffy, but we keep the fans going as much as we can. We also mix our own masalas which means the air is often sharp with the smell of chilies and coriander. We don't have a big delivery fleet, just a couple of guys on scooters who know the shortcuts around Vadodara. The address is a bit tucked away, but the locals know where to find us when they need a bulk order for a small gathering or just their daily meal. We don't use any preservatives or anything like that, we just make what is needed for the day and try not to have any waste. Sometimes we get too many orders and have to tell people to wait, which isn't ideal but we can only roll so many chapatis at once. It’s a simple life of cooking and packing, and we are happy to stay busy.
