Our little spot is right beside railway platform number 3 in Birati. Being at 217 M B Road means we see people from all over the place. The sound of the trains is something we hear all day long, and you get used to it after a while. We occupy shop number two. It’s not a big space at all, but it’s enough for what we do. We spend a lot of time by the stoves, making sure the food is ready for the hungry commuters. You can hear the announcements from the platform while you sit and eat. It’s a very practical location for people who don't have much time to spare. We don't do any fancy plating or decorations. It’s just food served hot in a bowl or a packet. The floor is concrete and the walls are plain. We care more about the flavor in the pot than the paint on the walls. Living and working in Kolkata means dealing with the heat and the crowds, but we don't mind it. It’s just a living. We’ve been here long enough that the regular commuters don't even have to say their order anymore. We just see them and know what they want. It’s a busy life, especially during the morning and evening office hours. If you are waiting for a train on platform 3, you’ll probably see our sign through the gate. We keep things simple and stay focused on the kitchen.
