Our place is on the ground floor over in Kalitala, Jyangra. It is right on Hatiara Road, directly opposite the SBI branch there. Being across from a bank means we see a lot of people coming and going all day long. Kolkata is a very noisy city, and Hatiara Road is no exception to that rule. The sound of car horns and people talking is just part of the background here. We spend a lot of our time over the big pots of rice. Making biryani is a slow process and you cannot really skip any steps if you want it to come out right for the customers. The kitchen gets very humid and the smell of the spices sticks to everything you wear. It is a small shop with just a few places to sit down. Most of our regular customers just take their food to go. We keep the counter as clean as we can, but with the dust from the busy street, it is a constant chore for us. We are not a fancy establishment with air conditioning or soft chairs. It is just a basic spot for a meal. Sometimes we run out of food before the sun even goes down if it has been a particularly busy day. We don't have a marketing team or anyone to take professional photos. We just serve the food we make each morning. Most people know us by now, so we don't need to do much else.
