Haji Taj Biryani

We've been here on Rajarhat Road for a good while now. It's a busy spot in Deshbandhunagar, right near the New Town Nursing Home. Most people find us because of the smell of the pots when we open them up at lunch time. We make biryani the way it’s usually done in Kolkata, nothing fancy, just plenty of rice and meat. The Jayngra Taltala area is always moving, so we get a lot of workers and families coming through. It’s a small place, honestly. Sometimes the tables are a bit tight and it gets noisy when the crowd picks up, but that's just how it is. We start early in the morning, getting the spices sorted and the meat cleaned. By the time the shutters go up, everything is steaming. If you're coming from the nursing home side, just look for the sign near the corner. We don't spend much time on decorations or anything like that. The focus is on the stove and making sure the food is hot. Sometimes we run out of certain pieces before the day is over, especially on weekends. It can get a bit frantic behind the counter when there's a line, but we try to keep up with everyone. We’ve seen the neighborhood change quite a bit over the years, more buildings going up everywhere. But we’re still here in B C 1, doing the same thing every day. It's just simple food for people who live around here.
