We are tucked away at Shop Number 6 on Tarun Sengupta Sarani in Italgacha. It is right near the HDFC ATM, so people usually find us easily when they are out doing their errands. Dada Haji Super Biryani is a small spot, but we stay busy. The smell of the spices usually lets people know we are cooking long before they see the sign. Kolkata is a city that loves its food, and Italgacha is no different. We spend a lot of time hovering over the big handis, making sure everything is timed right. The street outside is always narrow and packed with rickshaws and people walking to the market. We don't have a lot of seating, so many people just take their food home in plastic containers. It's a bit of a chaotic environment sometimes, especially in the evenings when everyone is finishing work. We use a lot of rice and meat every day, and the prep work starts early in the morning while the air is still a bit cool. We aren't trying to be the most famous place in the city, just a reliable one for the neighborhood. It’s just me and a couple of others keeping the fire going and making sure the biryani is ready when the first customer shows up. We’ve been in this shop for a while and we know most of the people who walk by every day. The rice needs to be just right, and that takes a lot of practice.
