New Madan Dhaba

Up here in Manali, things move a bit differently. We are located in Model Town, and the air is usually quite cold. New Madan Dhaba is a place where we keep the stove going to stay warm. We get a lot of travelers who are just passing through or staying nearby in the 175131 area. It’s a simple dhaba life. We spend a lot of time kneading dough for rotis and making sure the dal is simmering correctly. The mountains are right there, but we are usually too busy in the kitchen to look at them much. Sometimes the snow makes it hard for supplies to reach us, so we have to be careful with what we have. It’s not a fancy restaurant with waiters in uniforms. We just have sturdy tables and hot food. People come in with their heavy jackets and sit down to eat something warm. We’ve seen many tourists come and go over the seasons. Sometimes the power goes out and we have to use candles, but people don't seem to mind too much. It’s just the way things are in Model Town. We don't have any big missions or goals, we just want to make sure the food is ready when the hungry people show up. It’s hard work on the hands, but it’s a good way to spend the day.
