In Manali, things move a bit differently. We are located right on the Mall Road, across from the main taxi stand. It’s a very busy place, especially when the tourists start arriving in the summer or during the snow season. You can always hear the taxi drivers calling out and the sound of tourists walking by. The air is cold most of the year, so we try to keep the inside of the shop feeling warm and inviting. We have a few benches where people can sit and rest their feet after walking up and down the hills. The floor gets a bit muddy when it rains or snows, so we are always cleaning it. We don't have a big fancy sign, just the name Aggarwal. The kitchen is small but it has everything we need to keep things going. We serve simple things that people like to eat when they are out in the cold. Most of our workers live nearby and they know the area very well. We don't do much in terms of promotion. People usually find us just by walking past the taxi stand. The view of the mountains from the front door is nice, but we are usually too busy to look at it. We just focus on the daily chores, like getting the milk and making sure the stove is hot. It’s a simple life in the mountains.
