Hot Pot

Hot Pot is located at house number 59 on Bhuban Road. We are in Uzan Bazar, which is one of the older parts of Guwahati. Being near Latasil means we get a lot of people who are walking around the neighborhood or coming from the nearby market. The shop is quite humble. We have a few pots always simmering on the stove, which is probably why we picked the name. The air in the kitchen is always thick with steam. I usually start my day early by going to the market to see what is available. Uzan Bazar has a lot of energy, and we try to match that in our own quiet way. The building we are in is an older one, so it has some character, like the high ceilings and the way the doors creak. We don't have a lot of staff, so everyone does a bit of everything, from washing dishes to taking orders. It gets a bit chaotic when it rains because everyone crowds inside to stay dry. We don't have a fancy cooling system, just the breeze from the windows and some ceiling fans. People don't come here for the decor. They come because they are in Uzan Bazar and need something hot to eat. We just keep our heads down and keep the pots moving every single day. It’s not a big fancy operation, but it’s our life.
