Grill Republica

Our place is on G S Road in Guwahati, right opposite the IDBI Bank. If you've ever been on G S Road, you know it’s the main artery of the city. There’s always cars and bikes zooming past. We’ve been here for a couple of years now. The shop is small and simple. We have a counter where you order and some basic seating. I spend a lot of time in the back prep area. Guwahati weather is unpredictable, so some days it’s pouring rain and we have people huddling inside to stay dry. Other days it’s steaming hot. We don't do anything too fancy. We just make sure the meat is grilled right and the bread is fresh. I usually get to the shop early to meet the vegetable vendors. We don't have a big corporate office or anything like that. It’s just us. My younger brother helps with the cleaning after we close up at night. We’ve had the same few guys working the kitchen since we opened. We know the bank employees across the street pretty well because they come over for lunch almost every day. It’s a busy life on a busy road. We don't spend much on advertising; people just see the sign when they're stuck in traffic and decide to stop by. It’s a plain, honest business and we’re just happy to be part of the neighborhood. We don't overthink it.
