Toran Restaurant

Toran Restaurant is situated at the Hotel Rajputana Palace on Airport Road in the Aerodrame area of Jodhpur. We are right near the Panchbatti Circle, which is a busy spot. Being near the airport means we see a lot of people who are just arriving in the city or getting ready to leave. They usually have their suitcases with them and look a bit tired from their flights. We try to get them their food without making them wait too long. The restaurant has a bit of a traditional feel to it, which matches the rest of Jodhpur, I suppose. The walls have some old photos and the furniture is heavy wood. In the evenings, the light from the street comes in through the front windows. We spend a lot of time cleaning the dust off the tables because it gets very windy and dry out here. Our kitchen staff is a small group and we have been working together for a few years now. We mostly focus on local dishes that use the spices we get from the market nearby. It’s not a quiet place because of the planes and the traffic, but we are used to it by now. We just open up the doors, turn on the lights, and start the day's work like everyone else on Airport Road.
