Panjabi Chicken Corner

Our shop is number 130 in Sindhi Colony, right across from the Medical College in Jodhpur. Panjabi Chicken Corner has been here for a while, and we mostly cater to the local residents and students from the college. It’s a straightforward place. We focus on chicken dishes, and we don't try to do too many other things. The kitchen is where most of the action happens. You can usually see the smoke and smell the spices from the street. It’s a small shop, so most people prefer to stand and eat or take their orders home. We don't have any fancy seating or a big dining hall. It’s just us serving up food as fast as we can. The evenings are usually our busiest time when the students finish their classes. It gets pretty crowded around the counter then. We’ve kept the same way of cooking since we opened. We don't really change the recipes because people seem to like them the way they are. Jodhpur can be hot, but that doesn't stop people from wanting a spicy meal. We just keep the stove going and handle the orders as they come in. It’s a simple business, run by a few of us who just know how to cook chicken. We don't put much thought into marketing. People know where we are and what they are going to get when they visit.
