New Solanki A One DAL Baati is located on the Pal Bypass Road in Jodhpur. We are quite close to the Delhi Public School and the Pal Chraha, which makes it easy for people to find us. As you can guess from the name, we mostly do dal baati. It’s what people in Jodhpur want, and it’s what we know how to make. The place is pretty basic. We have large pots of dal simmering and the baatis are made fresh throughout the day. The heat in Jodhpur can be really something, so the kitchen gets incredibly hot, but we are used to it by now. We don't have air conditioning, just some ceiling fans that spin as fast as they can. The tables are usually covered with simple cloths, and we keep the onions and lemons ready on the side. We get a lot of truck drivers and families who are traveling along the bypass. It is not a place for a fancy date, but it is a place where you can eat until you need a nap. My family helps out with the accounts and the serving. We don’t use any complicated recipes, just the ones we’ve used for years. It’s a bit dusty because of the road, but we keep the food covered. We’re just a regular Jodhpur spot.
