Nakoda Restaurant

Our restaurant is right on Railway Station Road in Jodhpur, directly opposite the Digamber Jain Mandir. It is a very loud and busy part of town because of the trains coming in and the people visiting the temple. We have been here for a long time, and the building shows its age a bit, but it works for what we need. The fans are always humming to keep the Jodhpur heat away, and the smell of the street comes in every time the door opens. We have a few rows of tables where people sit down for a quick meal before catching their next train. It is not a place where you come for a fancy night out; it is more for people who are hungry and need a place to sit for a bit. I spend my time mostly at the front or checking on the kitchen. There is always a glass of water to fill or a plate to clear. The street outside is full of rickshaws and vendors, so there is always something to look at if things get slow. We don't have any big speeches about what we do. We just open the doors every morning, cook the food, and try to keep the place tidy for the next person who walks in. It gets dusty with all the traffic outside, so we are constantly cleaning the tables to keep things decent.
