If you know Howrah, you know how busy it gets around the AC Market. Our place, Skylark Restaurant, is right there at 47 Dobson Rd. We’ve been here for a long time, watching the crowds go by every single day. It’s a noisy spot, but we like it that way. Being near Howrah AC Market means there’s always people looking for a bite to eat after they finish their shopping. We open up the shutters early and start getting the kitchen ready for the lunch rush. The heat in the kitchen gets pretty intense, but we’re used to it by now. Dobson Rd is always packed with rickshaws and cars honking, and that sound just becomes part of the background when you’re working here. We aren't a big fancy chain or anything like that. It’s just us, serving food to whoever walks in the door at 711101. Sometimes things get a bit chaotic when the market is at its busiest, but we manage to get the plates out. The floors need sweeping constantly because of the dust from the street. It’s hard work, and our hands are always busy. We don’t spend time on decorations or anything like that. We just focus on the food and making sure people leave with a full stomach. It’s a plain, honest way to make a living in Howrah, and we’ve been doing it this way for years.
