Our restaurant is located on Debendra Ganguly Road in Howrah. This part of town has a lot of history and the buildings are packed close together. We have been in this spot for some time, and it’s a fairly straightforward setup. There isn't much of a view, just the street and the people walking by on their way to work or home. Howrah can be quite damp, especially when the monsoon hits, and we’re always checking the roof for leaks or making sure the floor isn't too slippery for everyone. The street lighting is a bit dim at night, so we have a bright bulb outside. The kitchen is where most of the noise comes from. We do a lot of stir-frying and there’s always the sound of metal pans clanking together. It’s not a quiet place to sit, but it’s honest. We use simple wooden chairs and the lighting is just what we could get installed. Some of the regulars have been coming here since we opened, and they usually just sit in the same corner every time. We don't have a fancy menu printed on thick paper, just the usual items we know how to make well. Sometimes we run out of certain ingredients if the delivery truck gets stuck in traffic, which happens a lot on this road. We just tell people what we have left and they usually don't mind. It’s just a small local eatery trying to keep the stoves going through the day and night. We close up when the food runs out.
