Kashmir Biryani

Kashmir Biryani is tucked away in the Rehman Complex, right near the Kona Express Way in Howrah. If you know the area near the Ankurhati Checkpost on the Bombay Highway, you know it’s a busy spot with lots of trucks and travelers. We started this place because we liked cooking and it seemed like a good spot to catch people who were hungry from a long drive. It’s not a quiet place to work. The sound of the traffic from the highway is always there in the background. We spend our mornings cutting onions and getting the big pots of rice ready. My hands usually smell like spices by the end of the day, which is just part of the job. Makardah is a busy place, and being near the checkpost means we see all sorts of people. Some are just passing through to another state, and others live right down the road. We don't have any fancy seating or air conditioning. It’s a simple setup with some tables and chairs where you can sit and eat. Sometimes we run out of food earlier than expected if a big group comes in, and we just have to tell people to come back tomorrow. It’s a lot of sweat and hard work over the stove, but we like seeing people enjoy a plate of food. The Rehman Complex has a few other shops, but we think we’re the busiest one around the lunch hour.
