Main Kachari Chownk is always loud, and being at Shop Number 11 puts us right in the middle of all that noise. Amritsar is a city that really loves its food, and we are just one small part of that whole local scene. Right across from us is Sharma Dabha, so there is always a bit of friendly competition for who can get the most people in during the dinner rush. We spend most of our day prepping in the back. You can smell the spices and the chicken from a block away if the wind is blowing in the right direction. It gets pretty hot inside, especially when the burners are all going at once and the orders are piling up. We’ve got the old signs and the same stools we’ve had for a long time. It isn't a place for fine dining or anything fancy like that. You come to Grand Sons Chaman Chicken Hut, you eat, and you go. The floor gets a bit greasy by the end of the night, but we scrub it down every single time we close up. My sons and I handle most of the work ourselves. We’ve seen the Chownk change over the years, with new shops opening and old ones closing, but we stay right here. People know us by name, and we usually know what they want before they even sit down. It’s just cooking and serving.
